Ingredients
- 2 Chicken Breasts
- 1 lb of trimmed asparagus
- 1 sprig of fresh rosemary
- 1 leak
- ½ lb bacon or pancetta
- 1/4 cup white wine
- salt and pepper
Directions
- Preheat oven to 400 degrees
- Take trimmed chicken and wrap in pancetta or bacon until no chicken remains seen
- Wash leeks and cut into ¼ inch pieces
- Cut asparagus into 1 inch spears
- Place leeks and asparagus in a tin-foil bowl
- Add olive oil, salt, pepper, and white wine
- Place pancetta wrapped chicken on top, adding a bit of olive oil
- Place Rosemary on top of chicken
- Bake for 25 minutes
