Pancetta wrapped Chicken with Leeks and Rosemary

Ingredients

  • 2 Chicken Breasts
  • 1 lb of trimmed asparagus
  • 1 sprig of fresh rosemary
  • 1 leak
  • ½ lb bacon or pancetta
  • 1/4 cup white wine
  • salt and pepper

Directions

  • Preheat oven to 400 degrees
  • Take trimmed chicken and wrap in pancetta or bacon until no chicken remains seen
  • Wash leeks and cut into ¼ inch pieces
  • Cut asparagus into 1 inch spears
  • Place leeks and asparagus in a tin-foil bowl
  • Add olive oil, salt, pepper, and white wine
  • Place pancetta wrapped chicken on top, adding a bit of olive oil
  • Place Rosemary on top of chicken
  • Bake for 25 minutes
