Fish Tacos with Citrus salsa and Grilled Asparagus

Total Spend – $10-$16 dependent on ingredients

Ingredients

  • ½ lb Mahi Mahi (or whatever white fish you have available to you)
  • Tortillas (can be substituted with butter lettuce leafs for lighter dish)
  • Yogurt
  • 1 Jalapeno – seeded and diced
  • ½ bulb of fennel – sliced into rainbows
  • 1 orange – segmented and diced
  • Juice of 1 lime
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 10 Cherry tomatoes – halved
  • 1 bunch of Asparagus
  • salt and pepper

 

Directions

  • Grill the asparagus until tender – set aside and let cool
  • Mix yogurt with lemon juice and zest – set aside
  • Combine fennel, orange segments, jalapeno, lime juice, tomatoes, salt and pepper – set aside
  • Heat a non-stick pan and add olive oil or canola oil
  • Cut Mahi-Mahi into 1 inch segments, season with salt and pepper
  • Place fish into heated pan, let sear one side for 2 minutes, then flip and repeat
  • As fish is cooking, place tortillas into oven to heat for 1 minute
  • Add yogurt to tortilla, then asparagus, then fish, then citrus salsa
  • Enjoy!
